Peninsula All-Suite Hotel, Stony Brook Vineyards pair up

On Wednesday, 30 September 2015, not on the usual last Thursday due to Heritage Day, The Peninsula All-Suite Hotel welcomes Stony Brook Vineyards for another instalment of the Hotel’s popular monthly Wine & Dine Evenings.

Executive Chef, Hajierah Hamit, has planned a five-star gourmet set menu, each course specially prepared & paired with a complementing Stony Brook wine.

An ambassador from the respected Vineyard will join on the evening to educate guests on the art of winemaking, the qualities and attributes of each wine, as well as the reasons for each food pairing.

To compliment the craft and dedication which has made Stony Brook Vineyards a triumph, Chef Hajierah’s menu will start with Sugared Parma Ham and Melon Salad with a Mint Dressing. For an intermediate dish, guests can look forward to Smoked Duck with an Asian Coleslaw and Teriyaki Reduction.

To ensure guest enjoy the full flavour profile of the wines on offer, a palate cleanser of Lemon and Mint Sorbet will be served before moving on to the Main Course.
For the Main Course, the Chef has prepared Char Grilled Beef Fillet with Lemon Butter-infused Crayfish.

To end off the evening, guests will be treated to a Mad Hatters dessert prepared to offset the vibrant and full flavours of the Stony Brook offering.

“I have chosen very specific fresh, inventive dishes to complement the distinct aromas, blends and flavours of the wines on offer. We are very excited to bring Stony Brook Vineyard to our guests this month,” says Chef Hajierah.
