Trainees dish up a feast at the Peninsula

This month’s special installment of The Peninsula All-Suite Hotel’s popular Wine & Dine Evenings saw diners enjoying an evening of exceptional cuisine and fine wine, prepared and presented entirely by the hotel’s trainees, last week.

For some time now, under the supervision of senior Peninsula staff, these trainees from all areas of the hotel have been hard at work arranging every detail of the annual trainee Wine & Dine Evening, which featured a five-course meal, paired with wine from the Elgin Valley’s picturesque Iona Wine Estate, at The Peninsula’s Sunset Restaurant.

The Estate, selected for its exquisite range of fresh and fruity wines, is known for its approach to wine-making as an expression of the soils and climate of the vineyard and for its extensive use of sustainable farming methods and natural products.

To compliment this wine, the trainees presented a set menu starting with sesame seared tuna with Asian greens and honey-soya reduction, followed by flat bread topped with rare roast beef, marinated zucchini, and sundried tomato with wild rocket salad.

An orange mint sorbet with a dash of tequila was served to cleanse the palate before the main course of Mediterranean-style chicken supreme with seafood rice pilaf, tempura prawns and rustic chilli salsa was enjoyed.

For a sweet ending to this flavoursome feast, nougat dessert with marmalade-infused ice-cream and berry nut salad was served.

The Peninsula All-Suite Hotel is a beacon of understated Cape hospitality on the Platinum Mile of the Sea Point promenade on Cape Town’s Atlantic Seaboard.
